Meet our Team

Beth Hopping

Originally from Oregon, Beth headed even further west to study Human Nutrition at the University of Hawaii-Manoa. After graduation, she decided to check out the East Coast for a change and worked for an international nutrition research lab at UNC-Chapel Hill. Despite loving the field work in places like Arctic Canada, Barbados, and the Galapagos Islands, Beth decided to focus her doctoral studies on domestic food systems and the way the food environment affects eating behaviors. Beth met Linden during PhD school, and the two have been co-developing their research interests in community food systems, nutrition policies, and behavioral intervention design ever since. At CAH, they work on projects in school food, grocery retail, and various experiments that try to better understand food-related behaviors.
